Builds a Nest module serving GET /health/{live,ready,startup} over a
HealthRegistry the application owns, so it can register its checks and
call markStarted() itself. For services with HTTP ingress (the gateway);
NATS-only services use startProbeListener instead.
The controller closes over the registry rather than injecting it: parameter decorators are not parseable by the repository's Biome configuration, and a registry is one instance per process anyway.
